It is thought to be the world’s oldest tree, the fig tree can be traced back to the earliest documents and features prominently in the Bible. Originally Figs are from the Middle East and the Mediterranean.

There are multiple varieties of fig, all of which differs in colour and texture. Their unique feature is a little bud opening called an ostiole at the top that helps the fruit develop. Their naturally sweet taste along with a soft chewy outside with crunchy edible seeds in the middle makes the fig so unique. It’s not to everyone taste but it’s works beautifully as a savoury or sweet dish.

Fresh figs obviously have a certain shelf life and will spoil at some point. Figs are often dried to preserve them and can be eaten when ever your desire.
Are Figs good for you?
Absolutely yes they are. 👍 although they are naturally high in sugar, but are a fantastic source of fibre. Loaded full of minerals, copper, iron, magnesium, calcium and potassium. And Vitamin A and K.
How to choose the best Fig..
You should look for Figs that are plump and rich in colour and have no damage to them. Look for any signs of bruising and mould. If so don’t purchase. Ripe Figs will have a sweet fragrance to them. These will keep perfect in your fridge at home for 3/4 days. If you purchased un ripe Figs then leave out of the fridge in a warm environment until it becomes ripe.

Fig, Onion and Sultana Chutney Recipe 👈
• 400g Fresh Figs – diced
• 2 White Onions – diced
• 130g Sultanas
• 1 and 1/2 Teaspoon Mustard seeds
• 1 Green Apple – cored, peeled and diced
• 110g dark brown sugar
• 140ml Cider Vinegar
• Salt and Pepper – pinch of each
Method..
• In heavy bottomed pan sweat the onions
• do not colour them
• add Apples, Mustard, Figs and sultanas
• cook for 5 mins
• Add Sugar and Vinegar
• Slowly cook for 1 hour
• Chutney will be sticky
• Store In sterilised jars
