Is there anything better than making your own bread.? The aroma coming from your kitchen after taking out a fresh loaf or rolls is second to none. it’s actually much easier than you thought to make.
Also you can experiment with different flavour combinations and alter your recipe every time you make a batch. Sound fun right?

Caramelised Onion bread 🍞
Ingredients (12 rolls)
• 2 medium onions, finely sliced
• 55g olive oil
• 55g lukewarm water (not hot)
• 1 package dry yeast
• 120g water (maybe all not needed)
• 480g Strong bread flour
• salt and pepper
1. Heat a little bit of oil in a thick bottom pan over low heat, sauté the onions until soft and golden brown in colour, cook for around 6 mins.
2. In a mixing bowl add the flour and make a well in the middle. Pour the lukewarm water in the well and sprinkle in the yeast.
3. The yeast will start to react, add the onions and the olive oil.
4. Using a mixer with a dough hook, stir in salt and pepper.
5. Slowly, with the mixer on low speed pour enough water until the dough comes together and cleans itself from the sides of the bowl. If needed add more a little more flour or water.
6. Let the mixer knead the dough for about 6 minutes until smooth and elastic.
7. Remove the dough from the bowl, place in a grease bowl. Cover with cling film and leave in a warm place until doubled in size.
8. Divide the dough into 12 even sized portions and with your hands shape them into rolls. (Or whatever shape you desire) Place the dough on a tray with parchment paper, let them rest and prove for 25 more minutes.
9. Meanwhile, heat the oven to 190 degrees.
10. Bake the rolls for 25 minutes or until golden brown.
Top tips – 👍
1 – To make wholemeal, use 380g wholemeal flour and 100g strong white flour
2 – To make the perfect loaf. Add the dough to a greased tin and prove and cook as above.
3 – Serve with Salted butter or alternatively Balsamic and Oil, hummus or pesto
